If there’s one recipe I’ve been asked for frequently from my kitchen, it’s the waffle batter recipe for my fresh waffles. Even before I moved out of my parents’ house, I had my own basic waffle recipe in my binder and I can’t even count how many times I’ve made this waffle batter and waffles for my friends and myself. Whether Belgian waffles or brussels waffle, whether in a heart shape or a box shape – the main thing is delicious.

Waffle batter recipe and waffles basic recipe – instructions

My waffles basic recipe is really quite simple: put everything in the order of the recipe in a mixing bowl, which is on a scale (therefore the milk in g instead of ml) and then mix everything together. Only with the milk I would first add only half and gradually add more until the waffle batter is as you would like it.

Some prefer the batter to be firm, as the waffles then become a bit crunchier. Some like to thin the batter more, as it will make more batter and the waffles will be fluffier.

I usually turn on the waffle iron when I have all the ingredients on the kitchen table. That way it’s really nice and hot when the batter is ready. The longer you mix, the fluffier the waffle will be. For me, the Kitchen Aid does this with the normal mixing hook and then mixes for about 5 minutes.

When the waffle iron is hot, you should oil both sides of the Teflon surface with a little margarine or butter before each waffle. I always put about 2.5 tablespoons of batter into my waffle iron. The longer the waffle bakes, the browner and crunchier it gets. So you can let it bake for an individual length for each guest.

When the waffle is done, it is carefully removed with a fork or spatula and placed on an oven rack to cool slightly in my case, so that it does not pass the moisture directly to the plate.

Homemade waffles – simple waffles basic recipe

Whether the waffles from my waffle batter recipe and basic recipe for waffles in the result should be fluffy or rather crunchy depends on the later baking time. The waffle recipe can be easily adapted depending on the season and thus also bake Christmas waffles. I always like to have waffle batter in the fridge for the weekend, because I can make waffles quickly when guests or family come to visit. If Sunday morning waffle batter is in the fridge, there are so also for breakfast like once waffles.

Tips for waffle preparation of the waffle batter recipe

If you want to modify my waffle batter recipe a bit more, you can of course omit some ingredients like lemon, vanilla sugar or shredded coconut. It works with whole milk, shelf stable milk, low fat milk and lactose free milk. I haven’t tried other types of milk yet and am happy to leave that up to you. Likewise, if you want to experiment with whole wheat flour.

If you want to try chocolate flavored waffles, just add 1-2 tablespoons of baking cocoa (not regular cocoa) and you may need a little more milk. At Christmas time, try the chocolate Christmas waffles with an additional 1-2 teaspoons of cinnamon. Really delicious waffle batter recipe!

The dough of this waffle batter recipe was enough for about 6 waffles in my large waffle maker. Everyone is well satisfied by a waffle. The rest of the dough I stored in an airtight container in the refrigerator and if it still became a little firmer then thinned again with a tablespoon of milk.

Waffles are perfect to have a quick cake substitute and keep you full for a long time if you don’t buy ready-made dough. By the way, ready-made waffles are also a good snack to take with you on the road and can bridge many a journey by train or car 😉 !

  • Place flour, sugar, margarine, shredded coconut, eggs, baking powder, vanilla sugar and lemon flavoring in mixing bowl.
    300 g cake flour
    60 g sugar
    70 g margarine, vegetable
    60 g coconut flakes
    2 eggs
    8 g baking powder
    8 g vanilla sugar
    1 tsp lemon flavor
  • Add milk gradually and adjust the amount slightly depending on the desired consistency. The less milk, the crunchier the waffles will be later.
    350 g whole milk
  • After the dough was mixed with the mixer for about 3 minutes, put into heated waffle iron. Wait about 2-3 minutes, depending on the desired browning of the waffles.Start 3 minutes timer here
  • Let waffles cool slightly on a cooling rack and serve lukewarm with powdered sugar, vanilla ice cream, whipped cream, cinnamon, hot cherries or Nutella.
